So I always like to start with Friday night…it was pretty uneventful. I can’t say that I didn’t enjoy it though! I am taking in every last quiet evening I can since they won’t be available in my household for a much longer! We did eat pizza at the best pizza place around called Moose’s Tooth and it was to die for. It was out cheat day for food and it was sooo good, but it never seems worth it in the end.
Saturday was fun! Nick was helping his buddy with a truck most all day (even though he said it would only take an hour and a half). I took the girls to get new swimsuits for their swim lesson assessment. On the way there we ran into our first big moose of the season – appropriately outside the housing area called “Moose Crossing” – no joke.
Thank goodness this big moose waited until we came to a complete stop – get this, it looked both ways, and THEN crossed the street.
I was so thankful that it crossed the street and went on its way. My biggest fear is hitting one of these things or getting attacked by one.
At the swim assessments I tried to get pictures of them – but it just didn’t work. I was having too much fun watching and taking in all the smiles and laughs that were to be had.
Saturday night ended with Ryley falling asleep watching Toy Story in her bean bag chair, and Abby falling asleep on her dad while watching a movie with him. She also stayed in the bed all night and that is never a good night of sleep.
Sunday was a great message in church as always by Pastor Prevo, and our Sunday School class was led brilliantly by Pastor Clary. I love that we found such a great place to be!
Nick went grocery shopping with Ryley and I stayed and played with Abby. Once those two returned we put everything away, I sent the girls upstairs to play, Nick went to wash his truck, and I began food prep day!

First I made a large pot of green tea and placed it in a container to cool – this is a ”free” beverage for us on our clean eating diet so I like to have it handy. Plus it goes in one of our many Shakeology recipes – and I hate not being able to make something because I didn’t prep one thing. 
Eggs – hard boiled for Nick. He sticks hummus in them and can have either 2 or 4 for his snack. We are not real fans of this combination, but we bought the hummus and my husband isn’t one for waste. It drives me nuts when I need to eat stuff I don’t like, but I also think he is so frugal and I love it. 
This is the corn and chopped tomatoes that I use for Nick’s egg whites in the mornings. I was just chopping up the tomatoes every morning, but that got old and if I was running late – well, he didn’t get what he wanted. I just put in 2-3 Tbsps. of this in a little olive oil, and allow that to cook while I separate the 5 egg whites from the yolk. Then I just make them scrambled. Nick did buy me a container of egg whites and I am going to measure how much the 5 eggs give me today and then just measure the egg whites starting tomorrow. I don’t know if it will save us any money so I wanted to check it out. Wasting all those yolks seemed awful! 
This is for me. It is my oatmeal. It is 2 Tbsps. of oatmeal, and half a scoop of vanilla BeachBody protein powder. Heat with 1/4 cup water and 2-3 Tbsps. of milk. Delicious. I sometimes add a tad more milk (1%) depending on my mood. I like the taste that the vanilla protein powder gives it. You could probably use any flavor you have!
This was our dinner Sunday night. Black bean with rice burgers. I used two cans of black beans, rinsed and drained. 2 cups of rice, 2 eggs, 4 Tbsps. of salsa, and about half a cup of bread crumbs. I mixed it all up on our ninja (I had to stir it a couple times) and then plopped it down in a medium heat skillet with some olive oil (which I periodically added more) and cooked. I let them brown/blacken on each side so I could make sure it was heated and cooked through. I topped mine with a slice of tomato, Mrs. Dash salt free seasoning, and either salsa or our homemade gyro sauce. That is just plain Greek yogurt, cucumbers, and some dill.
While I was food prepping and cooking – I was catching up on my vlogs from some of my favorite peeps out there – it was perfect!
It was delicious and made for a great evening that yielded me and hubby lunch for tomorrow as well!
